Divide the dough into equal-sized balls. Take one ball and roll it out into a small circle on a lightly floured surface.
Place a spoonful of the prepared potato filling in the center of the rolled-out dough circle.
Bring the edges of the dough together and seal the filling inside. Flatten the filled dough ball gently.
Roll out the stuffed dough ball into a roti (flatbread) of desired thickness, using a rolling pin. Be careful not to let the filling come out.
Heat a tawa or griddle over medium-high heat. Place the rolled-out roti on the hot tawa.
Cook until small bubbles start to appear on the surface, then flip the roti.
Brush some oil or ghee on the cooked side and flip again. Cook until both sides are golden brown and cooked through.
Repeat the process with the remaining dough balls and filling.
