Spicy Aloo Roti

Ingredients
  

For the Dough:

  • 2 cups Country Pride All Purpose Flour
  • Water as needed
  • Salt to taste

For the Filling:

  • 3 medium-sized potatoes boiled and mashed
  • 1 small onion finely chopped
  • 1 teaspoon ginger-garlic paste
  • 1/2 teaspoon cumin seeds
  • Salt to taste
  • Oil or ghee for cooking

Instructions
 

Prepare the Dough:

  • In a mixing bowl, combine the Country Pride All Purpose Flour and salt.
  • Gradually add water and knead to form a smooth and soft dough. Cover and let it rest for about 15-20 minutes.

Prepare the Filling:

  • Heat oil in a pan over medium heat. Add cumin seeds and let them splutter.
  • Add chopped onions and ginger-garlic paste and sauté until they turn translucent.
  • Add the mashed potatoes. Mix everything together until well combined. Cook for another 2-3 minutes. Remove from heat and let it cool slightly.

Make the Rotis:

  • Divide the dough into equal-sized balls. Take one ball and roll it out into a small circle on a lightly floured surface.
  • Place a spoonful of the prepared potato filling in the center of the rolled-out dough circle.
  • Bring the edges of the dough together and seal the filling inside. Flatten the filled dough ball gently.
  • Roll out the stuffed dough ball into a roti (flatbread) of desired thickness, using a rolling pin. Be careful not to let the filling come out.
  • Heat a tawa or griddle over medium-high heat. Place the rolled-out roti on the hot tawa.
  • Cook until small bubbles start to appear on the surface, then flip the roti.
  • Brush some oil or ghee on the cooked side and flip again. Cook until both sides are golden brown and cooked through.
  • Repeat the process with the remaining dough balls and filling.
